I thought we use to have this option, but would love to have the favicon option and header insert for analytic codes etc

1/ Favicon option you can find in Customizer -> Site identity section -> http://prntscr.com/zkqyee
2/ About header analytic codes
We did not add such field because ThemeForest rejected theme with such area. So, we just removed that.
We would recommend you to use wordpress.org/plugins/insert-headers-and-footers/ plugin.
It allows you to add scripts/html/meta in head, body or footer.
